Why is it we think omelets or frittatas or pancakes are only for breakfast? Is it because someone told us that? Or is it simply because our parents never had it for dinner and no one ever talks about it unless it’s for breakfast.

Well I’m here to tell you, you can enjoy an omelet any time of day. Just because there are eggs in it does not mean you can’t eat it at night. In fact some of my best dinners were derived from some of my breakfast concoctions. I say concoctions as I usually just throw them together. They are simple, nutritious and tasty.

Eggs are a great source of protein so I usually work with 10 eggs or so. Then I choose some type of meat. Only because my husband thinks he needs meat for dinner (it’s a guy thing). There we go again with what we think we need at dinner. I usually add some greens and I try to go with a mixed or power green. Meaning spinach, kale or Swiss chard. Mushrooms are usually a staple of mine and of course some rosemary or parsley too.

Let’s break out of this mindset of doing what you think you should do. Change things up a bit and have your breakfast for dinner and maybe have your dinner for breakfast. Why not have chicken lettuce wraps for breakfast? We have it for lunch and dinner. I say “go for it!”  Make food FUN! I hashtag that on Instagram all the time and there’s a reason for that. It doesn’t have to be a job to prepare food. Be creative and add different spices and veggies to your foods. You just might be surprised at what you can do with it. 

Here is one of my favorite breakfast or dinner recipes: Sweet Potato hash with a twist. Easy and Healthy. Give it a try and let me know what you think.

1 Large Sweet Potato, chopped

1 Red pepper chopped

1 handful of Cremini mushrooms chopped (optional)

1 handful of Organic Spinach chopped

1 ½ tsp of extra virgin Olive Oil

2 cloves of garlic, crushed

Rosemary chopped

Scallions chopped

¼ lb. of Boars head black forest ham chopped

Sea salt & pepper to taste

 

Instructions: 

In a large skillet, sauté oil and garlic over medium heat

Add in chopped sweet potato and stir for about 5 minutes

Add red peppers and sauté another 5 minutes with a lid on.

Remove lid and add Ham, mushrooms and cook another 5-7 minutes stirring often.

Mix in fresh spinach, rosemary and scallions and cook for 3-4 minutes.

 

Serve with eggs over easy or any egg of your choice.
