Most everyone I know loves pancakes!

Growing up, I spent a lot of time with my grandparents, especially on the weekends.  While grandma was an amazing cook, when it came to pancakes, grandpa took command of the kitchen.  I remember the smell trickling out of the kitchen and morning cartoons seemed to lose their appeal as our mouths started to water.  Fast forward several years to a much healthier version of myself, I still have a longing for pancakes.  But now I needed something that tasted good but without all the guilt of crushing my meal plan.  Don’t get me wrong, I’m all about balance, and these won’t replace Saturday mornings with my grandparents. But they sure do fill the void in between visits.

Healthy Pancakes:

  • 1 Cup of gluten free Oats
  • 2 Eggs
  • 1.5 scoops of Olympian Labs Vanilla protein powder
  • 1 cup of unsweetened Almond milk
  • 1 tsp of baking powder
  • 1 tsp of vanilla extract
  • Cinnamon- to your taste


Combine all ingredients in food processor or blender and lightly mix.  Add or subtract almond milk based on how thick you like your batter.  Cook in pan just as you would any other pancakes. 

Healthy topping options for pancakes!  Skip the sugary syrup and try a one of these.

  1. Almond or natural almond butter
  2. Fresh fruit
  3. Honey- go easy
  4. All-natural maple syrup- go easy
