One of the things I love most about the warmer weather is grilling.  I have yet to meet a grilled vegetable I did not like and zucchini happens to be one of my all time favorites.  Zucchini is packed with Vitamin C and phytonutrients that promote healthy eyesight.  Here is a delicious simple way to grill them and enjoy alongside your favorite grilled meats.

 Grilled Lemon Zucchini



-3 medium sized whole zucchinis

-2 whole lemons, Zested

-1/8 cup olive oil

-1/2 teaspoon salt

-1/2 teaspoon black pepper



Cut off the ends of the zucchini and slice them lengthwise into quarters.  Place them in a plastic Ziploc bag and pour the olive oil, salt, pepper, ½ Tablespoon of lemon zest and the juice of 1 lemon into the bag.  Seal the bag and toss the zucchini until all pieces are coated.   Set aside and marinate for 15-20 minutes.  Prepare grill to medium heat and grill all sides of zucchini until tender, being careful not to burn them.  Remove them to a plate and top with lemon zest and a sprinkle of salt if desired.
