Brownies are my favorite!  Chewy, sweet sometimes even salty!  Just like all of you out there is one or two foods that will make me come to my knees even when it comes to being on a strict diet.  So I went on a search for a healthy recipe and something that even a big guy like me can put together that taste good and will allow me to have a treat every so often without derailing my diet.  Try the one bellow and let me know what you think!

 

INGREDIENTS

Brownies:

1 and 1/2 cups dark chocolate chips, separated, go for 65% cacao (Ghirardelli or something similar) 

1/4 cup + 2 coconut oil

1 cup plain greek yogurt 2% or Full Fat

2 teaspoon vanilla extract

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 cup coconut sugar

3/4 cup gluten free oat flour 

 

Instructions: 

Preheat the oven to 350 degrees 

Use a 8 x 8 pan with foil or parchment paper and then spray with nonstick Coconut spray. 

In a bowl place 1 cup of chocolate chips 

Microwave or heat on stove top the coconut oil and measure the coconut oil in its melted, hot state.

Pour the hot melted coconut oil over the dark chocolate and stir the chocolate until it is completely melted.

Add in the Greek yogurt. Stir in the vanilla, salt, baking soda, and coconut sugar.

In a blender or food processor put in the oats. Blend until the oats resemble flour. Measure the oat flour after blending and not before.

Stir into the mixture. Stir in the remaining 1/2 cup chocolate chips.

Spread the mixture (should be thick) into the prepared 8 x 8 pan. Bake in the preheated oven for 28-32 minutes.

Remove from the oven and allow to cool completely.
